The main distinctive feature of Greek olive oil lies in its terroir, the geological richness of the soils, and the olive varieties used in the selection we offer. In addition to this strong identity, Greek olive oils are rich in oleic acid, antioxidants, omega-9 and monounsaturated acids, which give them therapeutic properties: helping to prevent the onset of cancer, slowing cellular aging, helping to combat cardiovascular disease…… In ancient Greece, olive oil was a symbol of good health and strength. It was used as a medicine. Today, numerous medical studies confirm the benefits of daily consumption of olive oil.

In 1992, the European Commission defined “PDOs” to avoid any confusion over the origin of agricultural products. A “PDO” enables the precise identification of the place or region from which a product originates; it also defines the quality or characteristics of the product, essentially or exclusively due to a particular geographical environment with its inherent natural and human factors. Finally, a “PDO” guarantees that all stages in the manufacture of the product are carried out in the defined geographical area. In Greece, there are a total of 30 registered PDOs for Greek olive oils, 21 of which are located in the Peloponnese region. Among the best-known, you’ll find the Kalamata PDO, which is featured in our product selection. PDO products represent excellence in agri-food production”.

European regulations define the taste and odor of extra virgin or virgin olive oil (Commission Regulation 2568/91 of July 11, 1991). This regulation stipulates that to qualify as Extra Virgin, your olive oil must have been cold-pressed using a mechanical process, very soon after harvesting, without the addition of chemicals or heat. In addition, its acidity must be less than 1%. For virgin olive oil, the pressing process must be the same, but the acidity level can be between 1% and 2%. Virgin or Extra Virgin? it all depends on your palate and your appetite for the acidity of your oil.

Keep your olive oil in a cool, dry place, away from light. It is important to close your bottle tightly to limit the risk of oxidation. Olive oil doesn’t go out of date! That’s why it has a “best before” date instead of a “use by” date. After the expiry date, your oil will still be edible, but will have lost its nutritional and taste qualities. On average, oil should be consumed within 18 months of bottling.

Virgin and extra virgin olive oils range in color from deep green to golden. Any difference in color should alert you to the condition of your oil. Olive oil’s resistance to heat is mainly due to its monounsaturated fatty acid composition. In fact, its smoke point, i.e. the temperature at which the molecules break down and burn, is around 170°C. Above this heat level, your oil will deteriorate and take on a bad taste. However, if you must use olive oil for cooking, we suggest you choose a virgin olive oil, and prefer an extra-virgin oil, for your salads and desserts, or use it cold to season meat and fish after cooking.

To prevent your wine from deteriorating over time, it’s important to observe a few conservation principles. Be vigilant about temperature variations, which are the main cause of deterioration in your wines. Choose a stable temperature between 10° and 14°C. You should also store your wines in a cellar where humidity does not exceed 70%. Beware: a cellar that is too dry can cause corks to shrink, leading to evaporation and oxidation. Light is also a factor; prolonged exposure to strong light will impact and degrade tannins. Finally, to optimize your wine’s preservation, choose a well-ventilated cellar so that any unpleasant odors don’t penetrate your corks and alter the taste of your wine.
