It is harvested by hand every year at optimal ripeness to ensure exceptional quality. Then, the olives naturally dry for 6 months in the drying facilities of the Mani Blaüel company. At the end of this production phase, the olives are preserved in extra virgin olive oil. The traditional method of harvesting and processing olives, combined with centuries-old preservation techniques, preserves their freshness and authenticity for your utmost enjoyment.
